"i want a baked item...."

i have a ton of blogs i'm wanting to put up, but i feel compelled to share about our after dinner hours tonight. while finishing up dinner i made the comment that i really wanted a baked item - you know, like a pie or cake or something. hubby threw out "or cookies" to which princess replied, "let's make cookies i can take to the tea party!"
okay - cookies it is. i remember that i don't have any kind of chocolate chips and since i don't like to make sugar cookies i suggested oatmeal raisin to the crew. every one seemed fairly excited at the prospect.
so then i text my friend kelly and beg her to come pick our green beans. now i realize i should get those cookies made - i mean wouldn't it be fun to offer her and the boys a warm cookie after taking my green bean bounty?!?!!?
then i remembered i also needed to make a veggie type breakfast casserole for saturday. so i pull out the computer and search for zucchini breakfast recipes. i settled on a spinach quiche instead. but i decided i'd see if i could find a new oatmeal raisin cookie that is a bit chewy. so i google that next. the first recipe that popped up was one that said eggless chewy oatmeal raisin cookies. ummm...OH YEAH! hubby finished off the eggs earlier this week.
i check out the recipe - it has gotten great reviews. so here we go. i was short on the butter so i subbed in my usual canola oil instead. several reviews said to cut down on the sugar so i did that too. i subbed in some whole wheat flour and ground some pecans to add to the last bunch.
my friend showed up while i was mixing so i do confess to being a little distracted. but what really distracted me was watching 4 boys throw cucumbers all around. they were cracking me up. so back to the cookies....i made the first batch and started putting the second batch on the cookie sheet when i said "i forgot to add the oatmeal!" goodness gracious....so i scoop those back up and add oatmeal. while the first batch was yummy - the ones with the oatmeal are amazing!!!!
now that i read this i realize that none of this is at all interesting to anyone is it? i guess for me it was just funny that i was so desparate to have something baked that i had to make cookies with half the butter and no eggs. or maybe it is was that whizboy has been telling me for 2 days i need to go to the grocery store and i was in denial. or maybe it is just that i've been doing nothing but garden veggies for days upon days that i'm neglecting any other kind of food item....
or maybe i just wanted to tell this story because it is my blog!
and - for a little fun....anyone wanna guess what the recipe said the egg substitute was?!?!!?!!

I think I've tried this recipe!!! Egg substitute - vinegar, water, and baking powder?? If so, they are DELICIOUS!

2021 word: rhythm

me, on politics

i despise politics. i never liked it, but i married a man fascinated with it. a man who wanted to be part of it all...and was, briefly. boy were our eyes opened... anyways...it seems like this election has several hot button topics. one of which is universal healthcare. my cousin started a blog called politics for mom and there have been several heated debates going on. i was reading several comments on healthcare. and frankly i was bothered! now, i don't know that a strict universal healthcare is the answer, but i do know that we have now doesn't work for the average person. here is our story.... hubby worked in a small business - 3 employees at the most that i can remember. we paid 1/2 our insurance..until it came to the point where our half each month was twice what we would pay if we were on our own. but for the owner it saved him money. so he agreed to cover ours in full. we were very grateful. i also know at times, that because of the healthcare cost, it was a struggle f

the word...

new year.  new decade. new word.  i started the habit of choosing a word almost exactly a decade ago.  each year the word has evolved and helped shape the year. well, this year is quite likely the exception.  or at least i thought it was.  my usual yearly reflection takes me on a journey through the year where the word has evolved into something entirely different than the road i envisioned. and usually i am in awe of how God used that word. this year was strange.  looking back on the goals i set, i see failure, not awe.  now before you go and tell me i am not a failure, i did fail at the goals i set.  truly.  goal 1:  grow and develop in a healthy way.  nope.  ending the year with extra instead of less.  attempted, yet didn't follow through on many health plans.  goal 2:  grow spiritually through meditation, scripture reading, and community.  nope.  ending the year with little reading and loss of church community that grieves me deeply. late fall i started pondering thes
